A truly special wine made from the rare and unusual Carignan Blanc grape variety, this wine has a lovely gold to golden straw colour, and a rich complex nose that includes lemon, beeswax, honey and many floral notes.
 
In the mouth it is equally complex with beeswax, honey, honeysuckle, may blossom, white fruits, and touches of peach. It is beautifully balanced and rich with the flavours remaining in the mouth for a long time.
 
This wine is beautifully made, and a rare treat.

Maturity: Delicious now, but has much aging potential

 
Food: will complement white meats with a creamy sauce, meatier fishes also with a sauce. Also great with chicken, and could possibly be the best wine for the finest roast chicken.

 
Variety: 100% Carignan Blanc (80 year old vines)

 
Terroir: Limestone based soils with much sand and many pebbles

 
Yields 25 hl/ha

 
Vinification:
  • Grapes are de-stemmed before a short period of skin contact and pressing
  • The must is fermented and the wine aged in large oak barrels for 10 – 14 months
  • The wine is not fined and is (usually) unfiltered before bottling
