AOC Minervois

The new vintage of this fascinating wine. It is made from 100% Carignan harvested from vines over 100 years old. This wine is intense and full of flavour, with much deep purple plum and concentrated black fruit coulis to the fore, but with some interesting high toned notes and good spice, particulary liquorice. Complex and very interesting this is a gem.

14% abv, or 10.5 units per bottle
 
Viticulture/Vinification:
  • 100 year old vines trained in goblets are the source for very healthy bunches of grapes
  • Grapes hand picked at low yields
  • Vinified in whole bunches, using semi-carbonic maceration
  • After a long maceration, aged in old oak barrels before bottling

Food: will cope with the flavours of larger game, including venison and wild boar, try also with partridge, well flavoured red meats, deeply flavoured vegetarian dishes and with mature hard cow's cheeses.
