Vinified in whole bunches, using semi-carbonic maceration
After a long maceration, aged in old oak barrels before bottling
Food: will cope with the flavours of larger game, including venison and wild boar, try also with partridge, well flavoured red meats, deeply flavoured vegetarian dishes and with mature hard cow's cheeses.
