A fantastic luscious sweet wine made from Viognier grapes that have been left to dry. It is fantastically complex, the many aromas include: nuts, white fruits, apricots, white peach, honey, acacia, honeysuckle, etc. The flavours are equally impressive and complex, with more stone fruits, apricot, quince, much floral character, and lovely gentle complex spice to the long finish. Truly amazing stuff! NB. Only available in 50cl bottles.

Maturity: Beautiful to drink now, but likely to evolve slowly over many years, staying at peak for perhaps ten years or more
Food: I suggest that this sweet wine is sipped on its own, or if necessary with a high quality sweet buiscuit.

Vinification:

Viognier grapes are harvested in whole bunches

The health of the bunches is checked very carefully

The bunches are kept intact for several months allowing the grapes to dry, concentrating the sugars

The dried grapes are pressed and the tiny amount of must is fermented for up to eight months until the fermentation naturally comes to an end

The wine is then bottled after a short period of rest.
