Vin de Pays d'Oc


This purple and ruby wine is deeply coloured and has aromas of smoky blackcurrant, berry fruit, raisins, and some complex peppery spice. Its taste profile is similar to the aromas, with the cassis and berry fruit complemented by a touch of mocha and some nice smooth spice, which becomes more evident towards the finish. Nice maturing fine ripe tannins and good acidity give the wine a good balance, and make it particularly good with food.

Food: this is a super food wine, great with roast meats, sausages, casseroles, game pie or cheesy vegetable bakes.

Alcohol: 13.5% abv or 10 units per bottle

Varieties: 70% Cabernet Sauvignon
                  30% Merlot

Vinification:
  • Grapes de-stemmed and crushed on arrival at the winery
  • 8 weeks of maceration/fermentation at 26 degrees
  • Regular remontage and occasional delestage used to manage extraction
  • Aged in mainly old Fench oak barriques for 12 months
