Vin de Pays des Coteaux du Libron

This traditional Languedoc blend of Grenache, Syrah and Carignan is deeply coloured with a multi-faceted nose of red fruits, berry fruits cherry, plum and much spice. The flavours are more defined with the berry fruit to the fore and the spice and black olive notes developing in the glass. The wine has lots of complexity of flavour, which is added to by the gentle freshness and wonderful soft, ripe, fine grained tannins and a long length of flavour.

Maturity: Drinking well now on the fruit, it will improve for up to 5 years and then drink well for another 5+ years.
Food: Try with Parma Ham, cold meats, rare red meats, rare tuna steaks, tagine and spiced oriental food, or wait a year or three and try with game birds or fine strongly flavoured onion or vegetable tarts.
 
Varieties: 50% Grenache Noir (20 year old vines)
                  30% Syrah (40 year old vines)
                  20% Carignan (60 year old vines)

Terroir: Limestone based soils with much sand and many pebbles
Yields 25 hl/ha
Vinification:
  • Grapes are de-stemmed before 3 weeks maceration/fermentation in cuve
  • Pigeage used to aid extraction, with occasional remontage if necessary
  • Must lightly pressed
  • Wine aged for 10 months in oak – the Syrah in barriques used for one previous wine and the Grenache and Carignan in larger demi-muids
  • Wine might be gently fined but is not filtered before bottling
