The nose is complex and full of much spicy dark fruit aromas including blackberry, black cherry and blackcurrant, all with much interesting oriental spice and some lovely animal character. The powerful palate is more fruit dominated, which is also more keenly defined than on the nose, with bramble, mulberry, blackcurrant, and black cherry. The spice is also interesting with mace, nutmeg and coriander and a touch of black pepper all noted. The good complexity is added to with some lovely ripe tannins, and lovely balance.
 
This is a big powerful complex and balanced wine that is a benchmark for the Gres de Montpellier.

Maturity: Drinking very well on the fruit until 2012, or wait and see how it develops and the spcie and animal comes through and matures to 2017+
 
Alcohol: 13.5% or 10 Units per bottle
 
Varieties: 50% Mourvedre, 30% Syrah, 20% Grenache Noir
 
Vinification:
  • Varieties fermented separately in steel cuves, the Syrah in whole bunches with the Mourvedre and Grenache destemmed
  • After a short period of aging in cuve, the best wines of the vintage are selected and the wine assembled
  • The wine is then aged in large oak foudres for 12 months before bottling
Food: Demands big foo, try caseroles, cassoulet, wild mushroom based dishes, game particularly wild boar and venison,or strong hard cheeses
