This Ugni Blanc is like no other I know: a long fermentation in contact with the skins and aging on viognier lees give a wine of great character. The result is a wine with a creamy texture, with fascinating aromas and flavours of butter, cream, ripe white fruits, and apricot with floral notes and a lovely touch of spice on the long finish. The wine has a lovely balance, and no little complexity. Great with food, this is a fascinating wine.

Maturity: Drink now to 2011
Food: A lovely food wine, try with fish, chicken or pork dishes that have a sauce, or even lighter game like rabbit or pheasant. It will cope with well flavoured food, but not hot spicy dishes.

Vinification:

Must is fermented in contact with the grape skins and pulp to extract maximum flavour and some colour

Initially aged for four to five months in oak barrels

Then transferred to barrels that have been used to age viognier, and aged on the lees of the viognier for a further five to six months before bottling
