Domaine la Fadeze
Domaine la Fadeze is in some ways an unusual Languedoc wine producer, as the entire production is dedicated to making wines from a single grape variety.
The vineyard is situated on the north bank of the Bassin de Thau, half way between Beziers and Montpellier. The Bassin is one of the salt water lagoons that line the sea shore from the Carmargue to south of Perpignan. The vineyard geology is quite uniform consisting mainly of undulating land made of clay rich limestone soils. This is a particularly hot place in summer, but fortunately through the ripening period, it benefits from daytime brezes from the north, which keep the grapes healthy, and nightime breezes from the sea, which cool the grapes allowing them to retain sufficent freshness to give balanced wines.
The domain uses modern production techniques, including machine harvesting, and the use of temperature controlled steel and concrete tanks for fermentation and aging the wines. The resulting wines are pure and well balanced and all exhibit lovely varietal character.
