AOC Pic-Saint-Loup

A complex and interesting rosé of medium pink colour. The nose is full of berries with strawberry and raspberry, all supported by some lovely sweet spice and a hint of minerality. The flavours are similar to the nose, but include a touch of tropical fruits and a floral note. The wine is very nicely balanced, with enough body and a lovely freshness, that combine to make it superb with food.

Maturity: delicious now, but will drink well until 2011 – 12
 
Food: Serve slightly chilled and this versatile wine will be a lovely aperitif, or be a good match to vegetable bakes and crumbles, salads, and North African styled food. It will also be good with fish, particularly those caught in rivers, and with lighter white meat and poultry dishes.
 
Varieties: 30% Syrah
                  30% Grenache Noir
                  30% Mourvèdre
                  10% Cinsault
 
Yields : <40 hl/ha

Vinification :
  • Detstemed grapes are pressed and the must fermented at cool temperatures
  • Aged in cuve until bottling in the March following the harvest
