L'Ermitage du Pic Saint Loup
Currently owned by the three Ravaille brothers L’Ermitage du Pic Saint-Loup has been in the family since the late 18th Century, but it was only in 1992 that Jean-Marc, Pierre and Xavier started to produce their own wines. After some early success, in 1999 they took the decision to investigate using the biodynamic techniques Pierre had seen implemented in other parts of the region. Quickly convinced that biodynamics was for them they began the long conversion process that continues today.


The domain consists of 55 ha of vines of many varieties. The terroir is very varied and has examples of six of the seven major geological types found in the appellation. With such diversity, the parcels are suited to different grape varieties, for example Syrah loves the high altitude hard limestone, whereas the Grenache Noir is more suites to the lower well drained limestone clay soils, Roussanne thrives on a small patch of dolimitic limestone.

The majority of the vines are trained as Cordon de Royat, with a few old vines still en goblet. The treatments used are all organic/biodynamic and are applied at homeopathic levels of dosage. The vinification is largely traditional, but temperature controlled in 50hl stainless steel cuves for the reds and barriques for the white wine. The level of oak aging is dependent on the year and the cuvee, but is always done carefully to avoid the wine gaining a taste of oak.
 


The brothers only make five wines: three reds, a white and a rosé. Each wine reflects the terroir on which the grapes are grown – all are full of character and all are particularly suited to drinking with a meal.

Rich and complex with an initial massive attack of red berry and currant fruit on the nose and palate with a few herbal notes trying to come through on the impressive length. This wine has lovely balance and is going to be very, very good in a year or two if it has not all been drunk in the meantime!

Recognised as one of the best non-micro-cuvée red wines from the Pic-Saint-Loup, the Cuvée Sainte Agnès Rouge is deeply coloured and has a nose of blackcurrant, strawberry, violet and bramble with touches of mocha and much spice. The palate tends more to the fruit before the violet and spice join the choclate and some gravy notes towards an impressive finish.

One of the great icon wines of Languedoc, the Guilhem Gaucelm is made from roughly equal proportions of old vines Grenache and Syrah grown on the southern flank of the Pic Saint Loup mountain. The wine is wonderfully complex with red and dark berry fruits, black olive, black cherry and spice to the fore. This is a superbly balanced masterpiece.
