AOC Languedoc

This is a very classy Languedoc white, which has a lovely oily texture and much complex aroma with beeswax, white stone fruit, blossom and floral aromas. When drunk, the flavours are also complex, with ripe white fruits like white peach, apple complemented by beeswax, and hints of smoke and some lovely spice on the long finish. The wine has a lovely oily texture, but is is very fresh, with lovely balance, and while easy to drink it keeps the drinker interested and is very good with food.

Maturity: Lovely to drink now, but will improve even more over the next year and then drink at peak over two more years.

Food: Lovely with fish dishes, particularly white fish or salmon in a sauce, also good with pork dishes like a tenderloin with a cream sauce, or try with sheep and goat cheeses that are not too powerful.

Yield 20hl/ha

Vinification
  • Hand picked grapes carefully sorted before pressing
  • Cold fermentation at 15 to 20 degrees
  • Aged for 8 months in cuve, with frequent lees stirring for the first 2 months
