Vin de Pays de l'Herault

There is a lot of character in this bottle of wine; the nose is full of high-toned spice – vanilla, black pepper, oriental spices, thyme, garrigues – but it also has much dark berry, plum and cassis fruit. The flavours are more fruit dominated, with the cassis and plumy dark fruits to the fore, but with the spices complemented by eucalyptus more evident on the long finish. The wine is well balanced, with plenty of ripe tannins and a subtle freshness - a classy wine that will repay further aging.

Maturity: quite young at the moment, can be drunk now but will benefit from a bit of aging. Will really be hitting its stride in 2010 and will drink well for at least 5 years

Food: Today it needs decanting, and to be drunk with stronger fattier foods to help modeate the tannins. Later it will be superb with game casserole, venison, and strongly flavoured meat dishes.

Varieties: 80% Syrah
                  20% Cabernet Sauvignon

Vinification:
  • Hand picked grapes, de-stemmed on arrival at the winery
  • Long maceration/fermentation in steel cuves
  • Aged in oak barriques (25% new) for 8 months
