Vin de Pays de l'Herault

With a good purple/ruby colour, this wine has aromas of cassis and berry fruit with a touch of pepper spice and cedar box. Its flavours are a bit more complex, with the cassis and berries complemented by fruits of the forest, undergrowth, a touch of high toned herbs - menthol and eucalyptus – and nice ripe tannins and a good length.

Maturity: Needs decanting today as it is still quite young, but will improve over 3 years and drink well for 3 – 5 more

Food: Will cope well with stronger flavoured meat dishes, particularly with a sauce, or say roast lamb or pork with crackling.

Alcohol: 13.5% abv or 10 units per bottle

Varieties: 80% Cabernet Sauvignon
                  20% Syrah

Vinification:
  • Hand picked grapes are de-stemmed on arrival at the winery
  • Maceration/fermentation for 3 – 4 weeks in steel cuves
  • Aged for 8 months, with one third in oak barrels new to three years old.
