AOC Coteaux du Languedoc

This wonderful Grenache based wine has lovely aromas of complex red and black berry fruits, notably loganberry and bramble, with a touch of mocha and much sweet spice particularly allspice and nutmeg. The complex flavours are similar to the aromas, but tend to be a bit more defined, for example the bramble seems to have developed into blackberry and bilberry, the spices are also more complex, with all spice, star anis, cumin Szechuan pepper and white pepper corns noted. While the flavours continue to develop in the mouth making it very interesting, the tannins are ripe and well managed and add to the overall pleasure.

Maturity: despite being delicious now, it will continue to improve even more, for 2 – 3 years, and then drink at peak for 3 – 5 more.

Food: Particularly good with beef, either slow roast, in a casserole or even a good steak, will also be particularly good with stronger game like venison.

Yields: 15 – 25 hl/ha

Vinification
 
  • Hand picked grapes carefully sorted
  • 30 - 40 days maceration/fermentation with pigeage as required
  • Aged for 18 months in cuve
