Vin de Pays d'Oc

This deeply coloured wine has a complex nose with much fruit, including plums, cherries, cassis, and bramble. It also has plenty of other aromas like violet spice and a lovely herbal streak. In the mouth it has nice balance, with good fine ripe tannins, and plenty of flavours similar to the nose, but with increased black and purple fruits. This wine is carefully made and is impressive in both a tasting and on the table.

Maturity: Drinking nicely on the fruit now, but will develop over the next three years and remain at peak for a further 3 – 5 years.

Food: Well flavoured casseroles, roast rib of beef, or grilled lamb chops would go very well with this wine, as would wild mushroom bakes or risottos.

               Cabernet Sauvignon

Terroir: Clay limestone soils with much gravel

Yields: 25 hl/ha

Vinification
  • Hand picked grapes sorted at the winery
  • Long maceration/fermentation of 28 – 30 days
  • Pigeage used daily as appropriate
  • Aged in cuve

Alcohol: 13.5% abv or 10 units per bottle
