AOC Coteaux du Languedoc

This Carignan dominated wine has a lovely rich smoky nose based on dark plum, and violet fruit aromas, with a generous helping of spice adding to the complexity. The flavour follows the nose but in a more defined way, with forest fruit, damson and bilberries noted as well as white pepper and oriental spices also discernable. The good ripe tannins are well managed and add to the interest. The length is impressive and also full of interest.

Maturity: lovely now, but will improve further and drink at peak for 5 years

Food: lovely now with lamb or roast pork, will also complement slow cooked wild boar.

Yields: 15 – 20 hl/ha

Vinification
  • Hand picked grapes carefully sorted
  • 15 – 20 days maceration/fermentation with pigeage as required
  • Aged for 12 months in cuve
