AOC Coteaux du Languedoc Picpoul de Pinet
This is a classic Picpoul de Pinet in many respects, with a nose of green apples, tropical fruit, pink grapefruit, and a nice streak of minerality. In the mouth it gets even more interesting, with the apples, tropical fruit, and pink grapefruit supplemented by yellow plums, floral notes and a lovely touch of honey with a good long mineral/citrus finish.
The wine is beautifully fresh, with nice complexity, it is very well balanced, and will be great to drink on many occasions.
Some people worry that Picpoul can be too acidic, rest assured this wine does have slightly higher acidity than many wines, but it has the structure and enough fruit to handle it well and to be very well balanced.

Maturity: Drink preferably now to 2011, but will continue to drink nicely through 2012

Grapes pressed on arrival at the cellar

A short period of must settling is followed by racking off and fermentation at 18 degrees in steel cuves

Aged on the lees for 6 months
Food: The classic seafood wine, but also great as an aperitif, with white fish or goats cheese.
