AOC Terrasses du Larzac

The nose of this wine is a complex mass of fruit – dark plum, bramble, and complex berry – and much peppery vanilla spice. In the mouth it is also full of flavours, including more plum and berry, with added chocolate and black olive noted before the complex spice becomes apparent on the long finish. The mature tannins contribute to the beautiful balance of the wine. Overall this is a really classy drink.

Maturity: At or near peak, drink over the next 3 – 5+ years

Food: Try with game, boar or heavier red meat dishes, would also be great with top quality sausages cooked with puy lentils.

Yields: 15 – 20 hl/ha

Vinification
  • Hand picked grapes carefully sorted
  • 30 - 40 days maceration/fermentation with pigeage as required
  • Aged for 18 months in barrel, 12.5% new
