Vin de Pays d'Oc

The initial reaction is that this has a lot more to it than the usual Languedoc Chardonnay. The pale gold wine has a nose of white peach, with touches of ripe apple, and with hints of cream and some attractive floral notes supported on a lovely minerality. On the palate the wine is more fruit dominated, with the ripe apple supported by some interesting tropical fruit flavours with that minerality and a strong dash of lemon coming through towards on the finish. The wine is very pure with a slightly nervy acidity that promises much in terms of food matching and possible future development.

Maturity: Fast approaching its peak, it should drink nicely until at least 2011
 
Food: This is a very versatile wine, it will be great with all sorts of fish, poultry and pork dishes, particularly those with a sauce (try it with Pork Tenderloin with Three Mustards, or Chicken Veronique). It will also be lovely with salads, particularly those based on pulses, bulgar wheat or couscous.
Alcohol: 13% abv or 10 units per bottle.
 
Variety: 100% Chardonnay
Vinification:
  • Grapes transported to cellar large containers, resulting in some free run juice being in contact with the skins for up to one hour
  • Grapes pressed on arrival at the cellar
  • Must cool fermented in stainless steel
  • Wine aged in cuve before bottling
