Vin de Pays d'Oc
This wine is a Languedoc version of the classic New World Cabernet/Syrah blend, but with a European twist.
It is made in a fruit driven style, with lots of black cherry, bramble, purple plum and cassis on the nose with a touch of spice just beginning to emerge. The palate is equally dominated by the fruit, but with the plum much more to the fore, supported nicely by the bramble and dark cherry flavours. The spice is also slightly more obvious with a nice hint of pepper and a touch of herbs noted, with a little bit of gamey meat beginning to develop on the length. All this is supported by some lovely soft tannins, and a lovely length, and only 13% alcohol. The wine is well balanced and very quaffable. The European twist is a slight restraint that the New World can find difficult to achieve.

Maturity: Lovely to dink on the fruit now, will develop and continue to drink well until 2012
Food: This is a real food wine, and will accompany any meaty dish, particularly grilled meats, charcuterie and sausages.

Machine harvested grapes undergo a temperature controlled maceration/fermentation for 20 days

Frequent short periods of remontage to aid the extraction process.
