AOC Coteaux du Languedoc


This fruit driven cuvee is relatively simple, but still has lots of interest, with fruits of the forest, bramble, blueberry cassis, berry fruits and a touch of sweetish spice all evident on the nose and in the mouth. It also has some nice ripe softening tannins and a nice balance. All this makes a wine that is easy to drink but that also has a bit of character.

Maturity: At peak drink over next two years

Food: Roast meats, red meats in a sauce, and try with harder cheeses that are not too strong.
 
Varieties: 50% Grenache Noir
                  35% Syrah
                  15% Cinsault
 
Yield 50 hl/ha
 
Vinification:
  • Grapes picked by hand and de-stemmed
  • Fermentation in cuve for 15+days with remontage to aid extraction process
  • Aged in cuve
