AOP Languedoc

At first this fruit driven cuvee seems relatively simple, but has lots of interest, with berry fruits, fruits of the forest, bramble, blueberry, cassis, and a touch of sweetish spice all evident on the nose and in the mouth. It also has some nice ripe soft tannins, a good length and a nice balance. All this makes for a wine that is not only easy to drink but one that also has plenty of character.

Food: Roast meats, red meats in a sauce, and try with harder cheeses that are not too strong.

                  35% Syrah
                  15% Cinsault

Vinification:
  • Grapes picked by hand and de-stemmed
  • Fermentation in cuve for 15+days with remontage to aid extraction process
  • Aged in cuve
