AOC Saint Chinian
A white wine made from Roussanne, Grenache Blanc and Carignan Blanc with a little Vermentino this wine has a lovely character with interesting floral aromas including cistus and bergamot, with lovely soft yellow fruits. This all comes through in the mouth, with the fruit more to the fore. Still young this wine is well balanced and has the potential to be very interesting!

Maturity: Still youthful, but drinking well, will improve for a year or two then drink at peak for a couple more
Food: try with cooked seafood like scallops or prawns, or with white meats. Alternatively will be lovely with young mild goat's cheese and things like a cheese souflee
Varieties: 65% Roussanne, 12% Grenache Blanc, 20% Carignan Blanc, 3% Vermentino
Alcohol: 13.5% abv or 10 Units per bottle
Vinification: - Cold settled at 4 degrees for 36 hours
- Fermented in new oak barrels at 16 degrees for 8 days with battonage
- Aged in barrels until malolactic finished after about 2 months
- Aged for a further 5 to 6 months in steel tank before bottling
