AOC Coteaux du Languedoc
This grand assemblage has a lovely pale straw colour, with flecks of green and gold. The nose is rounded and rich, with ripe apple, pear, lychee, lemon confit all apparent. The palate is dry and rich with those russet apples and ripe rocha pears again evident, but with much more complexity, with yellow plum, floral notes, and some citrus flavours all noted, with a nice touch of green herbs and good spicy minerality on the long length.
The wine has a lovely freshness, which is very wel balanced with the fruit and alcohol. This is a wine that is very drinkable.

Maturity: drink now to 2012+
Alcohol: 13.5% or 10 units per bottle
Varieties: 46% Marsanne, 20% Grenache Blanc, 12% Rousanne, 10% Picpoul, 7% Viognier, 5% Terret

Grapes pressed on arrival at the cellar

A short period of must settling is followed by racking off and fermentation at 18 degrees in steel cuves

Aged on the lees for 8 - 9 months
Food: Drink with fish or poultry, will cope with a rich sauce, or try with wheat based salads, rissottos, etc.
