A deeply flavoured, complex, rich wine. The nose is packed with ripe cassis, black fruits, and lovely peppery spice. In the mouth it is a lovely rich, smooth, powerful wine, with much blackcurrant, and black fruit flavours, with plenty of lovely pepper, vanilla and complex spice. It has some lovely tannins that are full and silky smooth though softening nicely. The wine is long, complex and superbly balanced.
 
The long period of oak aging of the wine has not left an unbalanced wine, the oak is remarkably well integrated, adding much to the complexity and nuance of the flavours.
 
Truly an eye opening Languedoc Cabernet.

Maturity: Drinking nicely on the fruit now, but will develop over the next three to five years and remain at peak for a further 3 – 5 years.

Food: Now drink with well flavoured casseroles, roast rib of beef, a sirloin steak or grilled lamb chops or with well flavoured risottos or vegetarian bakes

Varieties: Cabernet Sauvignon

Terroir: Clay limestone soils with much gravel

Yields: 25 hl/ha

Vinification
  • Hand picked grapes sorted in the vineyard and at the winery
  • Long maceration/fermentation of 35 days
  • Pigeage used daily as appropriate
  • Aged in oak barriques for 2 years

Alcohol: 14.5% abv or 11 units per bottle
