AOC Saint Chinian
A powerful red wine made from Grenache, Syrah and Carignan, it is full of rich red berry fruit and forest fruit flavours and aromas. It has a lovely streak of sweet spice particularly on the length, and just a touch of dried thyme. The tannins are soft and well controlled, and the balance lovely.

Maturity: drink on the fruit now, or keep for up to four years (2015)
Food: lamb chops, red meats, rabbit stew, roast duck, aubergine parmiginano, hard cheeses
Varieties: 60% Grenache, 30% Syrah, 20% Carignan
Alcohol: 13% abv or 10 units per bottle
Vinification: - Handpicked and destemmed grapes are fermented for 10 days (Carignan), 20 days (Grenache) or 28 days (Syrah)
- After a gentle press the varietal wines are aged in large old oak barrels for 8 months before blending and bottling
