AOC Languedoc

A deep ruby colour, this wine has a nose of rich dark red sweet berry fruit, damson, and dark earth spices including cinnamon and undergrowth. The palate is very well balanced, with lovely soft tannins and plenty of flavour, including: dark berry fruit, blackcurrant, sweet spice, dark spice, undergrowth and more. It has a lovely richness with good tannins and lovely complexity.

Maturity: Drinking well now, but will improve for up to three years and drink well for a further 3+ years.
Food: try with red meats cooked slowly with a sauce, game, duck or stronger flavoured caramelised vegetable tarts, roasted roots, etc.
 
Varieties: 85% Syrah
                  10% Grenache Noir
                     5% Carignan
 
Alcohol: 13.5% abv, or 10.1 Units per bottle
 
Yield 35 hl/ha
 
Vinification:
  • Grapes picked by hand and de-stemmed
  • Fermentation in cuve for 3+ weeks with remontage to aid extraction process
  • Aged in 2 - 3 year old barrels for 12 months
