Where to start? The colour - this is a deep intense ruby coloured wine, that swirls semingly slowly round the glass however hard you try to speed it up.
 
The nose is full of interest, with so much going on that every time you sniff you find some new nuance. Amongst those thins detected are: deep red berry fruit, raspberry, wild strawberry, blueberry, a touch of wild plum, a touch of sloe, black and dark berry fruit coullis, a touch of red currant, black currant, much complex sweet spice, tabacco, notes of caramel and treacle, and more!
 
The flavours are similar to the aromas, with the rich palate showing deep dark red berry fruit, raspberry, bramble, elderberry, (elderberry and bramble jam), some Greanche raisins, loads of complex spice, with mace, nutmeg, allspice, hints of cinamon, and tabacco. The soft tannins are lovely and silky, the length is very long.
 
Overall this wine is outstanding, with so much complexity, fantastic length and superb balance. It is delicious now, but will also age well for a decade or more.

100% Grenache Noir
 
Vinification - apart from the mutage (stopping of the fermentation by adding alcohol) this wine is made in a very similar way to most dry red wines
  • Grapes harvested by hand
  • Fermentation allowed to begin, then stopped by adding grape spirit
  • Left on the skins for 15 to 30 days to extract colour and flavour
  • After pressing, aged in barrel and tank for 18 months before bottling
Alcohol: 16% or 12 units per bottle
 
Food: very good with cheese, and deserts, particularly those using chocolate, or drink it as a "vin de contemplation" and contemplte the universe!
